Guide to Commercial Hot Food TablesAlthough you might think the name says it all, commercial hot food table knowledge goes far beyond just being a table that keeps foods hot. Hot food tables, also referred to as “steam tables,” come with many different options. While you won’t be able to efficiently use them to cook, they are ideal for heating up and keeping cooked food warm for self-service in the front of house or for serving customers from the back of the house. For buffet-style service, hot food tables are flexible in that they can be freestanding (and thus easy to move around and position in different areas) or can be built into existing counters.

Hot food tables are typically powered by either gas or electricity. This minute factor becomes important when deciding where in your restaurant the hot food table will go and what function it will serve. For instance, if you are using the hot food table to keep food warm in the kitchen in order to serve to customers and there exists only an electrical connection where the hot food table will go, the gas-powered hot food table is probably not your best choice.

The holidays are here, which means there will be great deal of buffets and brunches over the next few weeks. Hot food tables are an excellent way to not only serve food, but also to keep it warm. With a wide variety of styles to choose from, it is important to consider the intended usage, top layout, and your temperature needs before making your purchase.
There are many different types of hot food tables, such as water bath, dry, and infrared heat. In order to determine which type is best for you, you must be aware of what you will be primarily warming with your hot food table.
They can also range in size from containing two wells, up to five wells. Keep in mind that if you do purchase a pizza hot food table, it does not have any food wells. The main thing that does vary between each manufacturer is the under-shelf, as they can be stationary or adjustable. You will also need to determine if you need a hot food table that comes with a cutting board or a work-board. Finally, hot food tables either come with an infinite temperature control, or a thermostat control, which would allow for you to choose the temperature that you would like to have your table set at.

As we wrap up this holiday season, we are reminded of all of the big meals that are served this time of year. There are a lot of brunches and buffets occurring during the holidays. Therefore, this month we are highlighting hot food tables. We carry a wide range of styles. A Feast to Remember!
So your guests remember the food not the illness….

Thanksgiving is right around the corner and with large meals and many guests, the meal often turns to a buffet. When food is out on display for self-serving, it is the responsibility of both the guest and the host/restaurant to follow the food safety tips.

For the guest:

  • Wash up! Clean hands are the first step in a safe and healthy food environment.
  • Use a clean plate for every trip to the buffet. This will prevent germs from being transferred between guests.
  • If you are at a buffet and notice someone re-using a dirty plate, inform the manager. Some people may not have seen the sign requiring a fresh plate for each trip.
  • Respect the sneeze guard! If there is one available, serve yourself with your hands and keep your eyes, nose and mouth above the glass barrier.

For the restaurant/server:

  • Wash your hands before preparing food.
  • Keep the kitchen, dishes and utensils clean and always serve food on clean plates.
  • Cook food thoroughly – Fresh and frozen raw meat, poultry and fish should be cooked hot enough to kill the bacteria, parasites and viruses that may be in the product. The temperatures shown below are recommended for home preparation of food. Always use a meat thermometer to check temperatures.
  • Hot foods hot, cold foods cold!
  • Hot foods should be held at 140 degrees or warmer
  • Cold foods should be held at 40 degrees or coolerTwo Hour Rule! Food should not be at room temperature for more than 2 hours. Replace empty dishes – do not refill them.

There you have it folks – not the most exciting subject, but one of the most important! Food safety tips are always important and especially this time of year when buffets are more prevalent.

Eagle Group Hot Food Tables: Individual Controls Keep Food Just Right

What do you do if you want to warm three different items that need three different temperatures? You buy an Eagle Hot Food Table DHT 3-120. With it, you can warm your mashed potatoes to one temperature, your gravy to another and your cherry cobbler to a third. Is your mouth watering? Ours sure are.

The Eagle DHT 3-120 is just one of many excellent pieces of Eagle restaurant equipment here at Short Order, but it sure is a good one. In fact, it’s top of the line, with an open-base design made of heavy-gauge-type 430 stainless steel. Heating compartments are 8” deep, galvanized and insulated on all four sides and the bottom with 1” fiberglass or the equivalent.  This unit has three compartments — other Eagle hot food tables have more; although, what very well may be the best thing about this series of hot food tables is that there are individual controls for every compartment.

Each of the compartments of the Eagle Group DHT 3-120 Hot Food Table is fitted with 500-watt heating elements. A recessed control panel with those nifty individual infinite controls offers high and low temperature settings, while an indicator light remains on continuously when the control is in the “ON” position. The unit comes with a six-foot cord and plug which extends from the right side of the unit. A handy polycarbonate cutting board is located on the control side of the unit. This table is so cool, even though it is all about the heat.

Pans are sold separately so that you can get the type you need, whether stainless steel or aluminum. Other options from which you can choose include a bolted-in undershelf, overshelves, tray slides, a tray shelf, a dish shelf, a rolltop cover and a hardwood cutting board.

Never serve food at the wrong temperature to your customers again. Oh, and save us a plate, please.

The Eagle Hot Food Table WT4-240 unit, an electric water bath steam table, is under the spotlight today. After all, customers expect hot foods to be hot when they are served. Hot food served cold just loses its appeal and so do over-cooked, limp veggies. In order to keep meals at the ideal temperature, you have to have a great hot food table. The WT4-240 is top of the line with an open base design made of heavy gauge type 430 stainless steel. The top is removable for cleaning, and all openings accommodate 12” x 20” steam table pans. The thermostat temperature control has an automatic low water cutoff with a built-in manual reset button. And, there is a polycarbonate 8” wide cutting board and stainless steel shelf attached. Other models are mobile with sturdy wheels. There is even an undershelf of galvanized steel.
