A Day with Pumpkin Puree

It’s that pumpkin-carving time of year and that leaves the question: What do you do with all of those pumpkin leftovers? We’ve scoured the internet and have found some delicious recipes that use pumpkin puree. Here are the ones that sounded the best to us:

Breakfast

Pumpkin Pancakes

We’ve all had pancakes, from buttermilk to blueberry, who doesn’t love a delicious pancake for breakfast? These hot-cakes sound especially good because they’re mixed with pumpkin, cinnamon and nutmeg. Fall in a pancake? Yes, please!

Makes 8-10 pancakes

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1 cup milk
  • 6 tablespoons pumpkin puree
  • 2 tablespoons butter, melted
  • 1 egg

Directions:

1. Stir together the flour, sugar, baking powder, cinnamon, ginger, salt, nutmeg and cloves in a medium bowl.

2. Whisk together the milk, pumpkin, butter and egg in a separate bowl. Fold this mixture into the dry ingredients.

3. Melt butter in a skillet over medium heat.

4. Pour 1/4 cup batter for each pancake and cook approximately 3 minutes per side.

5. Serve with butter and maple syrup.

 

Lunch

Thai-Spiced Pumpkin Soup

For a nice lunch that embraces the taste of fall, try this soup! The author says, “Keep in mind that different Thai curry pastes have differing strengths. Start with a teaspoon to start and then build from there until the soup has a level of spiciness and flavor that works for your palate.”

Serves 6

Ingredients:

  • 2 acorn squash, pumpkins, or other smallish winter squash
  • 3 tablespoons unsalted butter, room temperature
  • 1 14-ounce can coconut milk
  • 1 teaspoon (or more) red Thai curry paste
  • water
  • 2 teaspoons fine grain sea salt (or to taste)

Directions:

1. Preheat the oven to 375 degrees and place the oven racks in the middle.

2. Carefully cut each squash/pumpkin into halves (or quarters). Slather each piece of squash with butter, sprinkle generously with salt, place on a baking sheet skin sides down, and place in the oven. Roast for about an hour or until the squash is tender throughout.

3. When the pumpkin/squash are cool enough to handle scoop it into a large pot over medium high heat. Add the coconut milk and curry paste and bring to a simmer. Remove from the heat and puree with a hand blender, you should have a very thick base at this point. Now add water a cup at a time pureeing between additions until the soup is the consistency you prefer – a light vegetable stock would work here as well. Bring up to a simmer again and add the salt (and more curry paste if you like, I used just shy of 6 teaspoons but the curry paste I use is not over-the-top spicy).

 

Dinner

Pumpkin Risotto

I was always afraid to tackle risotto because the name sounds so… I don’t know… fancy? This recipe looks simple and delicious!

Makes 4 servings

Ingredients:

  • 2 tablespoons butter
  • 1 cup diced onion
  • 2 cloves garlic, finely minced
  • 1 cup arborio rice
  • 1/2 cup pumpkin puree
  • 3 cups chicken stock
  • 1/8 teaspoon ground thyme
  • 1/8 teaspoon poultry seasoning
  • 1 bay leaf
  • salt and pepper, to taste
  • 1/4 cup freshly grated parmeggiano reggiano cheese
  • 3 tablespoons heavy cream

Directions:

1. Preheat large skillet with high sides over medium heat. Melt butter and saute onions until translucent, 4 minutes.

2. Stir in garlic and cook until fragrant, about 30 seconds.

3. Pour in arborio rice and stir to coat all grains in the butter.

4. Pour in the pumpkin puree and about one cup of chicken stock as well as all the spices.

5. Stir until water has been absorbed. Continue in this fashion until no stock is left and risotto is thick.

6. Right before serving, add in cheese and cream.

7. Serve immediately with more cheese, if desired.

Pumpkin Pie Margarita

We love a good margarita here in Texas. I’m not sure if a Pumpkin Pie Margarita would be embraced or shunned at the local tex-mex eatery, but I’m willing to try it! It’s a tex-make take on fall!

Serves 4

Ingredients:

  • 1 cup Siempre Azul blanco tequila
  • 1/2 cup Grand Mariner
  • Juice of 4 limes
  • Juice of 1 orange
  • 1/2 cup pumpkin pie puree (yes, from a can)
  • 1/2 cup apple cider
  • 1/4 teaspoon cinnamon
  • Barest dash of nutmeg

Directions:

1. Fill blender 2/3 with ice.

2. Add all other ingredients.

3. Puree until smooth.

4. Rim glass with salt, sugar in the raw, or nothing.

5. Drink!

 

For Dessert

Chocolate Pumpkin Cheesecake Brownies

When you think of a dessert with pumpkin, you immediately think of pumpkin pie, right? I wanted to find something different…. and these brownies sound like they would be a homerun at Thanksgiving, or any other day of the week too!

Serves 16

Ingredients:

Chocolate Batter:

  • 3/4 cup butter, melted
  • 1 cup sugar
  • 1 tbsp pure vanilla extract
  • 2 eggs
  • 1/2 cup all purpose flour
  • 1/2 cup cocoa powder
  • 1/4 tsp salt
  • 2 tsp cinnamon

 

Cheesecake Batter: 

  • 8 oz cream cheese, softened
  • 1 egg
  • 1/3 cup sugar
  • 1/4 cup flour
  • 1/2 cup pumpkin puree
  • 1 tsp pure vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp pumpkin spice

Directions:

1. Preheat oven to 350F. Line a 8 inch x 8 inch square pan with parchment paper.

2. In the bowl of your mixer add melted butter, sugar, vanilla and mix well until light and fluffy. Add in eggs one at a time and continue beating. In another bowl, combine the dry ingredients and then gradually add them into the butter mixture.

3. In another bowl, beat together the cheesecake batter ingredients.

4. Spread about 2/3 of chocolate batter into the prepared pan, and spoon cheesecake batter over. Add remaining brownie batter over cheesecake batter. Swirl the batters together by running a butter knife back and forth through the pan.

5. Bake for 40 to 50 minutes, or until center is set. Cool completely on wire rack and chill before cutting and serving.
