The Wonders of Alto-Shaam Cook-and-Hold Ovens
Although this brand name may sound like part of a magician’s act (“Alaca-Alto-Shaam!”) or a children’s book (“I do not like green eggs and ham; I do not like them, Alto-Shaam I am”) or a famous orca (“Alto-Shaamu”), the Alto-Shaam brand is actually famous for its world-class cook-and-hold ovens and holding cabinets. Alto-Shaam does not believe in the whole “If you can’t take the heat, get out of the kitchen” philosophy. In fact, its equipment prefers to take the heat and stay in the kitchen for as long as possible, making foods more delicious and restaurants more efficient.
Founder Jerry Maahs first created Alto-Shaam warming technology in the 1950s as a way to keep chicken warm while it was being delivered. What started as a stainless steel box and a thermal cable evolved into an oven that could both cook and hold food to keep it at the perfect temperature. What’s more, Maahs found that this slow-cooking and warming technique actually kept meats bigger and tenderer for the duration of the cooking process. Yes, Maahs had found a way to get more bird for his buck.
Today, Alto-Shaam makes a whole line of restaurant equipment that helps kitchens turn out tastier food heated to the perfect temperature. Cook-and-hold ovens, heated holding cabinets, smokers, thermal shelves, carving stations, hot wells, and display cases are all part of the Alto-Shaam brand, and each one is known for its ability to save kitchens time, energy, and money, all while keeping foods heated perfectly. This is possible thanks to the temperature and humidity controls that come standard on Alto-Shaam equipment. These controls allow chefs to cook food slowly, keep it at just the right temperature, and serve it hot and fresh to customers right away.
Don’t have an Alto-Shaam cook-and-hold oven in your restaurant kitchen? We won’t call you a sham… but we certainly think it’s a shame.
